OK, so despite my best efforts, these do not make the prettiest chocolate rice cakes, but that doesn’t mean they fail on taste. These rice cakes were inspired by a love of Cadbury’s Jelly Popping Candy Marvellous Creations bars, which are a magic combination of chocolate, popping candy and jelly beans. Undoubtedly a huge sugar rush, but very tasty too.
This recipe is super quick and easy to make with the kids, the perfect activity for a rainy summer holidays, day. Just don’t tot up the sugar content, I imagine it would make pretty scary reading! Still a little of what you like…
1 bag of jelly beans (approx. 200g)
200g of rice pops
2 bars of milk chocolate
half a bar of white chocolate
1 tube of popping candy (you’ll find this in the baking aisle)
Place the jelly beans and rice pops in a bowl and mix, before adding the majority of the milk chocolate, melted, then mix. Half way through combining your ingredients, add the popping candy, mix until completely combined.
Spoon the mixture into a lined baking tray before placing in the fridge to set for 10 minutes. Meanwhile, melt the remaining milk chocolate and white chocolate in separate bowls. Once the rice cakes are set, drizzle the milk and white chocolate over the rice cake to create a pretty swirly pattern.
Return to the fridge to finish setting for another 10 minutes before removing. Slice the rice cake into servings and enjoy!
